In cities with a Chinatown, weekend mornings bring dim sum carts or order sheets, and lines form early at the most popular spots in Evanston; walk-ins are standard and reservations are uncommon outside large banquet restaurants. Regional labels matter: Cantonese, Sichuan, Hunan, Shanghainese and Taiwanese kitchens cook very differently, so a restaurant's stated region is a better guide to the food than the word "Chinese" alone. Some smaller restaurants in Illinois are BYOB with no corkage fee; call ahead to confirm. A tip of 15-20% is customary for table service but not expected at counter-order takeout. Spice level, MSG and allergen questions are normal to ask before ordering, and most kitchens are happy to leave an ingredient out or tone down the heat if you mention it when ordering rather than after the food arrives.

Evanston is in Illinois, in the Midwest, where summers are warm, winters are cold and snowy, and most errands are done by car; businesses keep steady year-round hours with the usual holiday changes.
